Cleaning meat and cheese slicers, user guide for the commercial kitchen.

Important: Always use approriate personal protective equipment (PPE) when undertaking any cleaning task and follow the manufacturer’s product use and where relevant dilution guidance.

Clean the slicer after every use

Turn off the power supply and unplug the machine.

The blade guard must be used and be set to zero so that the knife edge is not exposed.

Put on cut resistant gloves.

Scrape off any pieces of food and dispose of them.

Wash the machine with hot water with detergent diluted according to the manufacturer’s instructions.

Rinse with clean water to remove any traces of the detergent.

Allow to dry thoroughly or use a clean disposable cloth before switching back on.

Cleaning the slicer at the end of the shift

Turn off the power supply and unplug the machine.

The blade guard must be used and set to zero so that the knife edge is not exposed.

Put on cut resistant gloves.

Scrape off any pieces of food and dispose of them.

Take the machine apart according to the instructions you received in training.

Wash all removable parts with hot soapy water using detergent diluted according to the manufacturer’s instructions.

Wipe the body of the slicer with a clean cloth soaked in detergent. Make sure that you thoroughly clean the corners, drainage, grilles, seals and ceilings.

Rinse with clean hot water to remove the detergent.

Apply a kitchen sanitiser according to the manufacturer’s instructions.

Wipe with a clean cloth and allow to air dry.

Reassemble the slicer and ensure that all components are fitted correctly.

Check that the carriage runs smoothly before using again.
